“I have come here for eight years, and I have never seen this place so buzzing,” Tan-lu said. “Sydneysiders are serious about their coffee, and now they all find how good this place is. I am proud of these people to win the award, but I am also sad our secret because we all have to line up now.”

It was a good process as it started with a toby eponymous bean in his mother’s garage almost 30 years ago. It has now expanded to a small chain of shops, though it is the award -winning Chippendale Prime.

Since the announcement, many have changed. Now, Leslie says there is always a line when the door opens at 7:30 am, and there are plans to open a place in Manhattan later this year. But despite the current hugs, there is a reliable constant in Harbor City.

“We’re busy in the morning now, but everything is still quiet, like at work, at 3pm,” Leslie said. “There is only something in the Australian soul that turns, when everyone starts to think of beer.”
